Linden Honey aroma is woody, drug store and new, likewise depicted as mint, balsamic, menthol and camphor. It has low acidity, medium sweet taste and sometimes slightly bitter. It has a persistent aftertaste and is marginally astringent. The crystallization rate is medium to quick with fine to medium-sized crystals. Linden blossoms in late spring or early summer, selecting more nectar in warm, humid weather. In perfect atmospheric conditions, the linden is an extremely productive honey tree. A single tree’s blossoms can produce as much as 40 pounds of high-quality honey nectar, with honeybees able to collect nearly a full ounce of nectar from each flower. It is light in color & has a strong & distinctive aroma. Being relatively mild in taste it comes with woodsy & minty notes along with a pleasant aftertaste.

At the height of blooming in a Linden forest, the ambrosial fragrance of the small yellow-white blossoms encompasses you and draws honey bees from miles around. It is a tough honey to produce as the Linden trees blooms only 7-10 days.
