Vanilla and Honey Madeleines – A perfect recipe for tea time (March 08, 2023)
Serve alongside your tea, a bowl of berries, or just as a lip-smacking snack for those small hunger breaks. A madeleine is a hybrid of a cookie and a cake. It is a sponge cake that is a type of French butter cake. Each sponge cake is baked in a madeleine pan, which is similar to a muffin pan.
● Required Ingredients:
100-gram melted butter
100-gram flour
1 tablespoon buckwheat honey
1 tablespoon vanilla extract
1 whole egg separated
1 egg – egg white
The icing of your choice for dusting
● Directions for preparations:
1st step:
Firstly, heat the oven at 170C fan/gas 5/190C.
Apply a little amount of butter on a madeleine mould with 12 holes. Dust it lightly with the flour. If you don’t have a madeleine mould, then tartlet tins can be used.
2nd step:
Mix the 100 grams of flour and buckwheat honey in an appropriate amount in a bowl. Buckwheat honey has a nice aroma and is rich in taste with a slight butterscotch sort of touch in its flavor. Add egg yolk, honey, vanilla extract, and butter in a different bowl and whisk it using a fork.
Take two egg whites and mix them using a fork until stiff. Fold the butter and dry ingredients together until evenly mixed.
Then, fold this mixture in egg whites in two smaller batches using a large spoon.
Step 3:
Divide the stuff between the moulds prepared earlier and bake for approximately 10-12 minutes until they turn golden brown in color, and firm when touched.
Leave it to cool inside the moulds for some minutes and then take them out. Dust the madeleines with icing of your choice before you serve.
