Rustic Honey Cake Recipe (August 25, 2023)
Introducing the Rustic Honey Cake Recipe - a homemade delight that combines rich honey flavours with a tender crumb. Drizzled in warm honey-lemon glaze, it's perfect for any occasion or as a sweet treat anytime.
Ingredients:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup softened butter
- 3/4 cup granulated sugar
- 3 large eggs
- 1 cup honey (preferably raw)
- 1/2 cup buttermilk or yoghurt
- Zest one lemon (optional)
Glaze:
- 1/4 cup honey
- Juice of one lemon
Instructions:
Step 1: Preheat the oven to 350°F, grease and flour the cake pan.
Step 2: Whisk dry ingredients in a bowl, set aside.
Step 3: Cream butter and sugar in a large mixing bowl.
Step 4: Add eggs one at a time, beating well after each addition.
Step 5: Gradually add honey while mixing on low speed until combined.
Step 6: Alternate adding the dry ingredients mixture and buttermilk/yoghurt into the batter in three parts.
Step 7: Stir in an optional lemon zest for extra flavour.
Step 8: Pour batter into the prepared pan, and spread evenly with a spatula.
Step 9: Bake for about 35 to 40 minutes or until the toothpick comes out clean when inserted into the centre.
For Glaze: Combine honey and lemon juice in a saucepan over low heat until warmed and well combined.
Once the cake has cooled, drizzle glaze generously over top, allowing it to drip down the sides.
