Honey-Mustard Brussels Sprouts Salad (August 25, 2023)

Ingredients:
- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- Juice of 1 lemon
- 1/4 cup dried cranberries (optional)
- 1/4 cup chopped toasted almonds
Instructions:
Step 1 Preheat your oven to 400°F (200°C).
Step 2 In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper until well-coated.
Step 3 Spread the Brussels sprouts out on a baking sheet and roast them in the preheated oven for about 20 minutes or until they are tender and lightly browned.
Step 4 While the Brussels sprouts are roasting, prepare the dressing by whisking together honey, Dijon mustard, and lemon juice in a small bowl.
Step 5 Once roasted, transfer the Brussels sprouts back into the large bowl and drizzle them with half of the honey-mustard dressing while they're still warm.
Step 6 Toss gently to combine so that every piece is coated with dressing.
Step 7 Let it cool down for a few minutes before adding dried cranberries (if using) and chopped toasted almonds.
Step 8 Drizzle some more dressing over the salad if desired or serve extra on the side.
