Ingredients:


For the Mincemeat Filling:

- 1 cup mixed dried fruits (such as raisins, currants, sultanas)

- 1/2 cup chopped mixed nuts (such as almonds, walnuts)

- Zest and juice of 1 orange

- Zest and juice of 1 lemon

- 1/4 cup honey

- 1/4 cup brown sugar

- 1/2 tsp ground cinnamon

- 1/4 tsp ground nutmeg

- 1/4 tsp ground cloves

- 1/4 cup brandy (optional)

For the Pastry:

- 2 cups all-purpose flour

- 1/2 cup unsalted butter, cold and cubed

- 1/4 cup honey

- Cold water, as needed

For Assembly:

- 1 egg, beaten (for egg wash)

- Icing sugar, for dusting

 

Instructions:


1. Prepare the Mincemeat Filling:

   - In a mixing bowl, combine the dried fruits, chopped nuts, orange zest and juice, lemon zest and juice, honey, brown sugar, cinnamon, nutmeg, and cloves. Mix well to combine.

   - If using, add the brandy to the mixture and stir until everything is evenly coated. Cover and let it sit for at least 1 hour to allow the flavors to meld.

2. Make the Pastry:

   - In a large mixing bowl, combine the flour and cold, cubed butter. Using your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs.

   - Add the honey and mix until the dough starts to come together. If needed, add cold water, a little at a time, until the dough forms a ball.

   - Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.

3. Preheat the Oven:

   - Preheat your oven to 375°F (190°C) and grease a muffin tin.

4. Assemble the Mince Pies:

   - Roll out the chilled pastry on a lightly floured surface to about 1/8 inch thickness. Using a round cutter, cut out circles to line the muffin tin.

   - Fill each pastry-lined cup with a spoonful of the mincemeat filling.

   - Using a smaller cutter, cut out smaller circles or shapes from the remaining pastry to create tops for the pies. Place the pastry lids on top of the filling and seal the edges with a fork.

   - Brush the tops of the pies with beaten egg for a golden finish.

5. Bake the Pies:

   - Place the assembled pies in the preheated oven and bake for 20-25 minutes or until the pastry is golden brown and crisp.

   - Remove from the oven and let the pies cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

6. Serve and Enjoy:

   - Once the pies have cooled, dust them with icing sugar for a festive touch.
