This refreshing and nutritious Honey Kale Currant & Almond Salad is a perfect combination of flavors and textures. The sweetness of Geohoney complements the earthiness of kale, while the currants and almonds add a delightful crunch. Let's get started with the recipe!

Ingredients:

- 4 cups of fresh kale, stems removed and torn into bite-sized pieces

- 1/2 cup of currants

- 1/2 cup of sliced almonds

- 2 tablespoons of honey

- 2 tablespoons of extra virgin olive oil

- 1 tablespoon of lemon juice

- Salt and pepper to taste

Instructions:

1. In a large mixing bowl, combine the torn kale, currants, and sliced almonds. Toss them together gently to mix evenly.

2. In a separate small bowl, whisk together the honey, extra virgin olive oil, lemon juice, salt, and pepper until well combined. This will be the dressing for the salad.
