Honey-Ginger Chicken Stir-Fry! This dish blends tender chicken, sweet honey, and ginger. With colourful veggies and a flavorful glaze, it's a quick, satisfying meal over rice or noodles. Enjoy the burst of flavours!
Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 2 tbsp vegetable oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cup snap peas
- 1 carrot, julienned
- 2 green onions, sliced
- 2 tbsp cornstarch
- Salt and pepper, to taste
- Cooked rice or noodles, for serving
Instructions:
- Whisk together soy sauce, honey, ginger, and garlic. Set aside.
- Heat vegetable oil in a skillet or wok over medium-high heat.
- Cook chicken until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
- Remove cooked chicken from the skillet and set aside.
- Add bell peppers, snap peas, and carrots to the skillet. Stir-fry for 3-4 minutes until crisp-tender.
- Return the chicken to the skillet and pour the honey-ginger sauce over it.
- In a small bowl, mix cornstarch with 2 tbsp of water until smooth. Add to the skillet and stir well to combine.
- Cook for an additional 2-3 minutes until the sauce thickens.
- Sprinkle green onions over the stir-fry and toss everything together.
- Serve over cooked rice or noodles.
