Honey Berry Sheet Cake Recipe (November 22, 2023)

A delicious and moist honey berry sheet cake with a glaze, topped with fresh berries.

This is a delicious and easy-to-make cake that is perfect for any occasion. The honey gives the cake a moist and flavorful crumb, while the berries add a burst of sweetness and tartness. The glaze is the perfect finishing touch, adding a touch of sweetness and decadence.

Ingredients:


For the cake:

  • 1 cup (2 sticks) softened unsalted butter

  • 2 1/2 cups granulated sugar

  • 4 large eggs

  • 1 tsp vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup milk

  • 1 cup honey

  • 2 cups fresh or slightly thawed frozen berries

For the glaze:

  • 1 cup powdered sugar

  • 2 tbsp honey

  • 2 tbsp milk

Instructions:


  • Preheat the oven to 350°F (175°C), grease a 13x9-inch pan.

  • Cream butter and sugar, and add eggs and vanilla.

  • Mix flour, baking powder, and salt, then gradually add to wet ingredients.

  • Stir in milk and honey.

  • Pour batter into the pan, add berries and bake for 30-35 minutes.

  • Let the cake cool, then drizzle with glaze.

Tips:

  • Dark honey for a richer flavour.

  • Slightly thaw frozen berries.

  • Mix different berry types.

  • Use water or orange juice if out of milk.

  • Add a dollop of whipped cream for extra indulgence.
