Geohoney Grilled Shrimp (January 26, 2022)
Dress to impress – we’re not talking clothes – it’s a honey dressing this time!
Impress your taste buds with an exciting recipe, one you’d want your guests to indulge themselves with.
Enticingly, honey is used three ways on this one: Adding it to the brine allowing the meat to absorb the sweetness, post which, toss it with the brined shrimp so its sugars let the shrimp develop a good char without being overcooked, lastly, drizzle-drizzle over the finished dish for some honey-fill.
Ingredients – a total of 13 items:
- 1 & 1/2 pounds of unpeeled large shrimp
- 1 cup of boiling water
- 2 tablespoons of kosher salt
- 5 tablespoons of Sidr honey
- 2 cups (divided) of ice cubes
- 3 tablespoons of red wine vinegar
- 1/4 cup of extra-virgin olive oil
- 1/4 cup of finely chopped fresh flat-leaf parsley
- 3 tablespoons of finely chopped white onion
- 2 tablespoons of finely chopped fresh oregano
- 2 garlic cloves (minced)
- Cooking spray
- 1 small red Fresno chile (thinly sliced)
Preparation – a total of 4 steps:
Step 1
Start by deveining the shrimps and remove its legs from the shell (optional) - Do not remove shells from shrimp.
Combine 1 cup of boiling water, salt, and 2 & 1/2 tablespoons of honey in a large bowl; then stir all of them until the salt dissolves. Throw in the ice cubes and stir it all until the mixture cools down. Add the shrimps and refrigerate the entire thing for 20 minutes.
Remove the shrimps from the bowl discarding liquid. Pat the shrimps dry utilizing paper towels, then toss the shrimps with 1 & 1/2 teaspoons of the amazing honey.
Step 2
Preheat the grill to a medium-high heat.
Step 3
Place the red wine vinegar and the remaining 2 tablespoons of honey in a large bowl, then stir it with a whisk so it’s combined.
Gradually add olive oil, while ensuring you’re constantly stirring with a whisk until it’s well blended. Afterwards, stir in parsley, onion, oregano, and garlic.
Step 4
Arrange the unpeeled shrimps on the grill ensuring they’re coated with cooking spray, then grill the shrimps while uncovered for about 2 & 1/2 minutes on each side or until the they’re lightly charred and cooked through.
Now, add the shrimps to a bowl with vinegar mixture; toss them well until they’re coated, lastly, arrange the shrimp mixture on a platter, top them with sliced Fresno chile. Enjoy!
