Coffee Meringue With Warm Honey Fudge (December 26, 2023)

The recipe begins with a base of fluffy meringue nests, created by whipping egg whites to perfection. The addition of instant coffee powder adds a delightful hint of coffee flavor that perfectly complements the sweetness of the meringue.   • 4 egg whites
  • 1 cup granulated sugar
  • 2 teaspoons instant coffee powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1 cup heavy cream
  • 1/4 cup honey
  • 1/4 cup unsalted butter
  • 1/4 cup milk
  • 1/4 teaspoon salt


Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.

In a mixing bowl, combine the egg whites, cream of tartar, and a pinch of salt. Using an electric mixer, beat the mixture on medium speed until soft peaks form.

Gradually add the sugar, one tablespoon at a time, while continuing to beat the mixture. Once all the sugar is added, increase the speed to high and beat until stiff peaks form. The meringue should be glossy and hold its shape.

Gently fold in the instant coffee powder and vanilla extract into the meringue mixture until well combined.

Spoon the meringue mixture onto the prepared baking sheet, forming individual meringue nests or desired shapes. Create a small well in the center of each meringue.

Bake the meringues in the preheated oven for about 1.5 to 2 hours, or until the meringues are crisp and dry. Once done, turn off the oven and leave the meringues inside to cool gradually.

While the meringues are cooling, prepare the warm honey fudge. In a saucepan, combine the honey, butter, milk, and a pinch of salt. Heat the mixture over medium heat, stirring constantly until the butter is melted and the mixture is smooth.

Allow the honey fudge mixture to simmer for about 5 minutes, stirring occasionally. Remove from heat and let it cool slightly.

In a separate bowl, whip the heavy cream until soft peaks form. Gently fold in the warm honey fudge mixture until well combined.
