Bottled Nectarines in Honey Syrup (November 06, 2023)
This recipe is a delicious and easy way to preserve nectarines for year-round enjoyment. The honey syrup adds a touch of sweetness and richness to the fruit and the ascorbic acid powder helps to prevent the nectarines from browning.
Ingredients:
- 5 pounds ripe nectarines, halved, pitted, and sliced into 1-inch thick wedges
- 1-gallon water
- 2/3 cup sugar
- 1/2 cup honey
- 1 teaspoon ascorbic acid powder (optional)
Instructions:
Step 1: Combine the water, sugar, and honey in a large pot. Bring to a boil over medium heat, stirring constantly until the sugar dissolves.
Step 2: Add the nectarines to the pot and stir to coat.
Step 3: Bring the mixture back to a boil, then reduce heat to low and simmer for 10 minutes or until the nectarines are tender.
Step 4: Stir in the ascorbic acid powder, if using.
Step 5: Ladle the hot nectarines and syrup into hot, sterilised jars leaving 1/2-inch headspace.
Step 6: Wipe the rims of the jars with a clean damp cloth.
Step 7: Attach lids and rings and process in a boiling water bath for 20 minutes, adjusting for altitude.
Step 8: Let the jars cool completely before storing.
Bottle nectarines in honey syrup will keep them for up to 1 year in a cool, dark place. Enjoy!
