  • In a 3rd bowl, combine ½ cup flour, 2 teaspoon baking powder, ½ teaspoon baking soda and ¼ teaspoon salt.

  • Crack eggs and add 2 tablespoons of oil to the oat mixture. 

  • Then add all dry ingredients and mix well.

  • Heat the griddle over medium heat and grease it. 

  • Make pancakes from the batter. Pour ¼ cup of batter and flip them when the edges are covered in bubbles. 

  • Layer the pancakes, alternating them with banana slices.

  • Dip the bread slice into the egg mixture for 5 seconds each and then place both sides of the bread on the chopped almonds, pressing them. 

  • Place the bread into the melted butter and cook it until brown. 

  • Bake the grilled bread for 7-10 minutes.

  • Serve the slices with a dollop of ricotta and honey.
